Five habits of great salads. Dry your leaves. Wet leaves dilute the dressing and go soggy. A salad spinner or a clean tea towel does the job. Season every layer. A pinch of salt on tomatoes, on roasted vegetables and on grains makes a bigger difference than extra dressing at the end. Dress grains and beans while warm. They soak up flavour far better than cold ones. Toast nuts and seeds. Two or three minutes in a dry pan over medium heat, shaking often, until they smell nutty. Watch closely; they burn quickly. Dress leaves at the last minute. Sturdy ingredients like cabbage, kale and grains can sit in dressing; tender leaves cannot. Quick pickled onions. These appear in several recipes and keep for about two weeks in the fridge. Thinly slice 1 red onion and pack it into a clean jar. Warm 120 ml (half a cup) vinegar with 120 ml water, 1 tablespoon sugar and 1 teaspoon salt, stirring until dissolved, pour over the onion, cool and refrigerate. They are ready in about 30 minutes. Cook once, eat all week.
